Bitter melon (苦瓜) originated from India and was introduced into China during the 14th century. After this bitter melon has become a Chinese household regular vegetable and is as popular now as it was a few hundred years ago. In Chinese culture it’s believed eating bitter melon can help reduce blood sugar, help your liver recover and detox your body.
Bitter melon is an excellent source of vitamins B1, B2, and B3, C, magnesium, folate, zinc, phosphorus, manganese, and has high dietary fiber. It is rich in iron, and contains twice the beta-carotene of broccoli, twice the calcium of spinach, and twice the potassium of a banana, according to Health.com.
Stir-frying the bitter melon is usually the most common way to cook it, but it's important to prepare the melon by cleaning and cutting it properly first. Bitter Melon can also be tasty when stuffed with ground meat.
Two simple tips to tone down the bitterness:
1. Add salt and soak the melon in cold water for several hours to reduce the bitterness.
2. Blanch the melon to tone down the bitterness before using it in a recipe.
